The cuvee number 741 comes from the 2013 harvest. The grapes of this champagne come from the municipalities of Ay, Avize, Oiry, Dizy and Hautvillers. Blending: 61% Chardonnay harvested in the vineyards classified as Grand Cru of Avize, 18% Pinot Noir collected in the vineyards classified as Grand Cru and Premier Cru of Aÿe Dizy and 21% Pinot Meunier collected in the vineyards classified as Grand Cru and Premier Cru of Oiry and Hautvillers , all of the 2013 harvest combined with a percentage of 33% of reserve wines from previous harvests.
The musts are obtained exclusively from the first pressing. Alcoholic fermentation takes place in 5 hl French oak foudres. with the bâtonnage technique. The vinification is carried out without the use of malolactic fermentation. No filtration and low sulphite levels. Minimum 36 months of stay on the lees and at least 3 months of rest after dégorgement, disgorgement took place in February 2018. Dosage of liqueur: 2.5 g / L.
